Women ate 20 percent less and men 29 percent less when they ate without serving dishes in front of them. But if an individual can learn to play a musical instrument or speak a foreign language, then he or she may very well be able to learn how to reason and plan at the at the sight of food. In one circumstance they served themselves from dishes that sat in front of them on a table and then ate at that same table. Previous studies showed that obese and normal weight individuals have different brain wave activity in response to images of food. The obese subjects also registered the sight of food but, alas, there was little activation of the inhibitory control center. In a second circumstance they served themselves at a counter and then took their plates to a table where they ate without the temptation of additional food in front of them. Brain activity in response to images was measured by MRI (Magnetic Resonance Imaging). My favorite is his famous self-refilling soup bowls study. When presented with delectable foods at times when we are not hungry, we usually eat them. The maintainers were more attentive to food cues, and when they were cued, they automatically snapped into the reasoning-and-planning mode. Research has consistently shown that people are unable to resist temptations and inducements to eat. In both circumstances the subjects were instructed to eat as much or as little as they liked. And commercial advertising that tries to make us crave junk food usually succeeds. The idea here is not to go hungry but to eat from the small dishes that will fit enough food to satisfy your appetite, as research shows that when we use larger dishes we automatically eat more. What the scientists found The successful maintainers had a unique brain response to the images of food.

But that strong positive response might be the key to successful maintenance of lost weight. In the study, lead researcher Brian Wansink and colleagues had subjects eat the same foods in two different circumstances. Sure, the maintainers were drawn to yummy food, especially when hungry, like everyone else, but that seemed to trigger strategical thinking. Behavioral scientists from Brown University wondered if successful weight-loss maintainers differed biologically from other people. The scientists divided research subjects into three groups: (1) non-dieters of normal weight, (2) former dieters who had lost at least 30 pounds and maintained it for 3 years or more, and (3) obese folks ( BMI over 30 ) who had not successfully dieted. The scientists will only say that the maintainers respond to food cues with greater inhibitory control. On average, the subjects eating from the self-refilling bowls ate 73 percent more soup than the others without realizing it and without feeling any more full afterward. Half of the bowls were outfitted with a device that slowly and imperceptibly refilled them with soup as the subjects ate. For example, the results of a Cornell University study suggest that people eat more when they place serving dishes on the same table they eat from. Instead, the arousal-and-motivation part of their brains was stimulated. There are all kinds of simple ways to avoid temptations to overeat or eat the wrongs things. But brain activity data did not exist for people who had lost weight and maintained. Before the study, subjects refrained from eating or drinking for 4 hours, and so they were hungry. When served larger portions than we need to satisfy our appetite, we usually clear our plate anyway. Compared to the other groups, the maintainers showed greater activation in the areas of the brain responsible for visual processing and inhibitory control. Fifty-four subjects were invited to enjoy a bowl of soup, eating as much or as little as they liked. More research is needed to tell whether that action is.
